Instructions

    Injera dough: Mix teff and wheat flour with water into a thin batter. Cover and ferment at room temperature for 48 hours — it should smell slightly sour.

    Doro Wat: Roast onions WITHOUT fat in a heavy pot for 30 minutes until caramelized — this is the key to authentic Doro Wat.

    Stir in niter kibbeh and cannabis niter kibbeh/ghee. Add berbere spice and tomato paste, roast for 5 minutes.

    Add chicken pieces, turn to coat. Add 6.8 fl oz (200 ml) water, cover, and braise for 30 minutes until chicken is cooked through.

    Add hard-boiled eggs, score deeply all around, braise for another 10 minutes.

    Baking injera: Pour batter onto a hot, dry skillet (thin as a crêpe). Cover and steam for 2-3 minutes until the surface has holes and is no longer sticky. Do NOT flip.

    Place injera on a plate. Position Doro Wat in the center. Eat together by hand — use injera as a utensil.

  • The 48-hour fermentation is not optional — fresh teff dough lacks the characteristic sour flavor.
