Instructions

  1. 1
Place chicken in a pot, cover with cold water. Add ginger (halved), garlic, and scallions.
  2. 2
Bring to a boil, skim off foam. Lower to very low heat — gently poach chicken for 25–30 minutes. Internal temperature should reach 75°C (167°F).
  3. 3
Remove chicken, immediately plunge into ice water (5 minutes) — creates smooth, silky skin.
  4. 4
Poaching water is now chicken broth — strain through a sieve, taste and adjust seasoning.
  5. 5
Toast rice in sesame oil for 2 minutes. Cook with chicken broth (ratio 1:1.5 rice to broth).
  6. 6
Ginger-garlic sauce: Pound ginger paste and pressed garlic in a mortar. Stir in soybean paste, soy sauce, sugar, and vinegar.
  7. 7
Stir cold cannabis sesame oil into the ginger sauce.
  8. 8
Cut or slice chicken into pieces.
  9. 9
Place broth-cooked rice in bowls, chicken on top, cucumber slices on the side, cilantro on top. Serve cannabis ginger sauce separately.

Pro Tips

  • The ice water bath after poaching is essential for the characteristic smooth, silky skin.
  • Cook rice in the broth instead of water — makes it aromatic and rich.
  • Cannabis sesame oil in the ginger sauce: sesame pairs perfectly with the Asian flavor profile.
  • The dish tastes mild and comforting — perfect when you want something gentle and satisfying.
