Instructions

1Place chicken in a pot, cover with cold water. Add ginger (halved), garlic, and scallions.

2Bring to a boil, skim off foam. Lower to very low heat — gently poach chicken for 25–30 minutes. Internal temperature should reach 75°C (167°F).

3Remove chicken, immediately plunge into ice water (5 minutes) — creates smooth, silky skin.

4Poaching water is now chicken broth — strain through a sieve, taste and adjust seasoning.

5Toast rice in sesame oil for 2 minutes. Cook with chicken broth (ratio 1:1.5 rice to broth).

6Ginger-garlic sauce: Pound ginger paste and pressed garlic in a mortar. Stir in soybean paste, soy sauce, sugar, and vinegar.

7Stir cold cannabis sesame oil into the ginger sauce.

8Cut or slice chicken into pieces.

9Place broth-cooked rice in bowls, chicken on top, cucumber slices on the side, cilantro on top. Serve cannabis ginger sauce separately.
