Instructions

    Deep-fry one-third of the noodles at 350°F (175°C) for 2 min until crispy — these are the topping noodles.

    Cook remaining noodles normally, shock in cold water, set aside.

    Fry curry paste in a little coconut milk (from the thick part of the can) for 3 minutes.

    Add turmeric and cumin, toast for 1 minute.

    Add chicken pieces, coat all sides with paste.

    Add remaining coconut milk and broth. Simmer over medium heat for 20 minutes.

    Season with fish sauce, sugar, and lime juice.
