Instructions

1Deep-fry one-third of the noodles at 350°F (175°C) for 2 min until crispy — these are the topping noodles.

2Cook remaining noodles normally, shock in cold water, set aside.

3Fry curry paste in a little coconut milk (from the thick part of the can) for 3 minutes.

4Add turmeric and cumin, toast for 1 minute.

5Add chicken pieces, coat all sides with paste.

6Add remaining coconut milk and broth. Simmer over medium heat for 20 minutes.

7Season with fish sauce, sugar, and lime juice.

8Turn off heat. Stir in cold cannabis coconut oil.

9Place noodles in bowls, top with chicken and broth.

10Crown with fried noodles. Garnish with shallots, cilantro, chili, and mustard greens.
