Instructions

1Knead flour with water and 1 tsp salt into a smooth, elastic dough. Let rest for 30 minutes.

2Mix ground meat with finely chopped onion, garlic, cilantro, parsley, cumin, and pepper.

3Work cold water into the filling by spoonfuls until it's almost liquid and juicy — this is the key.

4Roll dough thin (2 mm), cut out circles (4 inches / 10 cm).

5Place 1 tbsp filling in the center, pull up dough edges and twist together in small pleats to form a braid — at least 18 pleats.

6Twist off any excess dough knob.

7Boil in salted water for 12–15 minutes. Chinkali are done when they float to the surface.

8Melt cannabis butter (maximum 160°F / 80°C), toss chinkali in it.
