Instructions

  1. 1
Knead flour with water and 1 tsp salt into a smooth, elastic dough. Let rest for 30 minutes.
  2. 2
Mix ground meat with finely chopped onion, garlic, cilantro, parsley, cumin, and pepper.
  3. 3
Work cold water into the filling by spoonfuls until it's almost liquid and juicy — this is the key.
  4. 4
Roll dough thin (2 mm), cut out circles (4 inches / 10 cm).
  5. 5
Place 1 tbsp filling in the center, pull up dough edges and twist together in small pleats to form a braid — at least 18 pleats.
  6. 6
Twist off any excess dough knob.
  7. 7
Boil in salted water for 12–15 minutes. Chinkali are done when they float to the surface.
  8. 8
Melt cannabis butter (maximum 160°F / 80°C), toss chinkali in it.

Pro Tips

  • Chinkali are eaten by hand: hold the braid, bite off the dough pocket, drink the broth first, then eat — never use a knife!
  • Water in the filling is essential: without water, there's no broth inside.
  • Cannabis butter for tossing at the end: no direct cooking, maximum cannabinoid retention.
