Instructions

  1. 1
Mix galbi marinade: soy sauce, grated pear, sugar, sesame oil, minced garlic, ginger, gochujang, sake, and pepper until well combined.
  2. 2
Place ribs in marinade — marinate at least 4 hours, preferably overnight in the refrigerator.
  3. 3
Heat grill or grill pan to maximum heat. Remove ribs from marinade and let excess drip off.
  4. 4
Grill over high heat for about 4–5 minutes per side until caramelized and lightly charred at the edges.
  5. 5
Bring remaining marinade to a quick boil and reduce into a dipping sauce.
  6. 6
Remove sauce from heat and stir in Cannabis-Sesame Oil cold.
  7. 7
Garnish ribs with scallions and toasted sesame seeds.
  8. 8
Traditional serving: remove meat from bone, wrap in lettuce leaves with rice and cannabis sauce.

Pro Tips

  • Flanken-cut ribs (sliced across the bone) are the classic galbi cut — available at Asian markets.
  • Pear or kiwi in the marinade: enzymes make beef extraordinarily tender.
  • Cannabis-Sesame Oil in the dipping sauce — the marinade's sesame oil carries the flavor perfectly.
  • Grill caramelization is essential: the sugar-soy combination must develop dark edges.
