Pat chicken dry. Dust with cornstarch, rice flour, salt, and garlic powder.
  2. 2
Heat oil to 320°F (160°C). Fry chicken 10 min. (first round — not yet crispy).
  3. 3
    Remove. Let rest 5 min.
  4. 4
Raise oil to 375°F (190°C). Fry chicken again for 5 min. until ultra-crispy. (Double-fry!)
  5. 5
Glaze: Melt cannabis butter. Stir in gochujang, soy sauce, honey, and garlic. Simmer 2 min.
  6. 6
Stir sesame oil into glaze. Remove from heat.
  7. 7
Toss hot chicken immediately in glaze.
  8. 8
Serve with sesame seeds, scallions, and kimchi.

Pro Tips

  • Double-frying is the secret — makes the coating ultra-thin yet crispy.
  • Cannabis butter goes in the GLAZE — after frying, no heat destroys THC anymore.
  • Adjust gochujang amount — 3 tbsp (45ml) is medium-hot, 5 tbsp (75ml) for heat lovers.
