Instructions

1Bring lamb and bones to a boil in plenty of water with onion, cardamom, cinnamon, allspice, and bay leaf. Simmer for 90 minutes until meat falls off the bone. Reserve broth.

2Rehydrate jameed: Soak in warm water for 1 hour, then whisk smooth with broth. Strain through a sieve.

3Heat jameed sauce and 500 ml (about 2 cups) cooking broth together. Stir constantly — yogurt must NOT boil or it will curdle.

4Toast rice in ghee for 2 minutes. Pour in cooking broth, simmer for 18 minutes.

5Melt Cannabis ZenButter and regular ghee together, drizzle over finished rice.

6Serve traditionally: Flatbread (markook) as a base, rice on top, lamb on the rice. Pour jameed sauce on the side.

7Sprinkle with toasted almonds and pine nuts. Top with parsley.
