Instructions

    Soak rice noodles in cold water for 30 minutes — they should be soft but still have a slight bite.

    Make the Pad Thai sauce: Mix tamarind paste, soy sauce, vegan fish sauce, and brown sugar together.

    Cut tofu into ¾-inch (2 cm) cubes, pat dry. In a pan with hot oil, pan-fry until golden brown on all sides. Set aside.

    Heat a wok to maximum heat. Heat oil. Toast garlic for 30 seconds.

    Add drained soaked noodles to the wok. Pour in sauce. Stir-fry for 2–3 minutes until noodles have absorbed the sauce.

    Push to the side. Crack eggs into the center (for vegan version: omit), scramble briefly, then mix with noodles.

    Add tofu and sprouts. Toss for 1 minute.

    Stir in green onions. Remove from heat.

    Plate and top with chopped peanuts, cilantro, lime wedges, and chili flakes. Drizzle cold cannabis sesame oil over the top.
