Instructions

  1. 1
Cut pancetta into small cubes. In a pot with 2 tbsp olive oil over medium heat, cook until crispy.
  2. 2
Finely dice onion, carrot, and celery. Sauté with pancetta for 5–6 minutes until soft.
  3. 3
Stir in garlic (minced) and tomato paste, toast for 2 minutes.
  4. 4
Add passata, broth, rosemary, bay leaf, and Parmesan rind if using.
  5. 5
Add half the beans. Mash the other half of the beans with a fork or immersion blender — this makes the soup creamy.
  6. 6
Bring to a boil and simmer for 15 minutes.
  7. 7
Cook pasta directly in the soup (not separately) — it absorbs the starch and makes the broth even thicker.
  8. 8
Remove bay leaf and rosemary. Season with salt and pepper to taste.
  9. 9
Ladle into deep bowls. Generously drizzle cold cannabis oil over top.

Pro Tips

  • Half-puréed beans give the classic creamy texture without cream.
  • Parmesan rind in the pot adds umami — don't throw away old rinds, save them for soups.
  • Cannabis oil as a finish is classically Southern Italian — drizzle real EVOO over finished dishes.
  • Cook pasta directly in the soup — but serve immediately, otherwise it absorbs too much liquid.
