Instructions

    Soak pearl barley overnight (or 1 hour in hot water). It takes a long time to cook.

    Place meat in 1.5 liters (6 cups) cold water with bay leaf and peppercorns. Bring to boil, skim foam, simmer for 40 minutes.

    Sauté onion and carrots in butter, add to soup. Add potatoes and celery.
