Instructions

  1. 1
Rempah (spice paste): blend chilis + garlic + shallots + ginger in a blender until paste forms.
  2. 2
Melt cannabis butter in a heavy pot. Sauté rempah for 5 minutes until fragrant.
  3. 3
Stir in ground spices. Toast for another 2 minutes.
  4. 4
    Coat beef with the paste.
  5. 5
Add coconut milk + lemongrass + galangal + kaffir lime leaves.
  6. 6
Bring to a boil. Then simmer UNCOVERED over low heat for 2–3 hours — liquid reduces completely.
  7. 7
Stir in kerisik (toasted coconut flakes) when the sauce is almost gone.
  8. 8
Continue cooking until the meat caramelizes in its own coconut fat — dark brown, dry-oily.
  9. 9
Season with palm sugar and salt. Serve over jasmine rice.

Pro Tips

  • Rendang is ready when ALL liquid is gone — the meat braises in coconut fat.
  • Cannabis butter in the rempah base — long braising time on low heat activates THC optimally.
  • Don't skip kerisik (toasted coconut flakes) — it gives the characteristic texture.
