Instructions

    Soak saffron threads in 3 tbsp hot broth for 15 minutes — the saffron water will turn bright yellow.

    Keep broth hot in a separate pot (never add cold broth to risotto).

    Dice shallots and garlic very finely. Sauté in olive oil over medium heat for 3–4 minutes until translucent.

    Deglaze with white wine. Stir constantly until completely absorbed.

    Add first ladle of hot broth. Stir constantly (or every 30 seconds). Add new broth only when previous amount is almost absorbed.

    Mantecatura: Stir in cold butter in pieces and Parmesan. Stir vigorously for 2 minutes until creamy and silky ('all'onda' — flowing like a wave).
