Instructions
-
1Peel beets — wear gloves, the juice stains heavily. Cut into ¾-inch (2cm) cubes.
-
2Heat cannabis butter in a heavy pot. Sauté shallots for 4 minutes until soft.
-
3Sauté garlic and ginger for 1 minute. Add beet cubes.
-
4Stir in balsamic vinegar and let it reduce briefly. Add vegetable broth.
-
5Bring to a boil, then simmer 35-40 minutes until beets are tender (fork test).
-
6Stir in honey, then puree with an immersion blender until creamy. Adjust seasoning.
-
7Mix crème fraîche with horseradish. Pour soup into bowls, dollop horseradish cream on top, garnish with fresh dill.
Pro Tips
- Canned beets save time but lose flavor compared to fresh.
- The soup is wonderful cold straight from the refrigerator as an amuse-bouche served in small glasses.
- Use cannabis butter only for sautéing the shallots — the beets cook in broth after that.
