Instructions

  1. 1
Peel beets — wear gloves, the juice stains heavily. Cut into ¾-inch (2cm) cubes.
  2. 2
Heat cannabis butter in a heavy pot. Sauté shallots for 4 minutes until soft.
  3. 3
Sauté garlic and ginger for 1 minute. Add beet cubes.
  4. 4
Stir in balsamic vinegar and let it reduce briefly. Add vegetable broth.
  5. 5
Bring to a boil, then simmer 35-40 minutes until beets are tender (fork test).
  6. 6
Stir in honey, then puree with an immersion blender until creamy. Adjust seasoning.
  7. 7
Mix crème fraîche with horseradish. Pour soup into bowls, dollop horseradish cream on top, garnish with fresh dill.

Pro Tips

  • Canned beets save time but lose flavor compared to fresh.
  • The soup is wonderful cold straight from the refrigerator as an amuse-bouche served in small glasses.
  • Use cannabis butter only for sautéing the shallots — the beets cook in broth after that.
