Instructions

  1. 1
Lay out beef flat and season with salt and pepper.
  2. 2
Spread mustard on each slice. Layer bacon strips and onion rings on top, placing 1 cornichon at the edge.
  3. 3
Roll up tightly and secure with toothpicks or kitchen twine.
  4. 4
Heat oil in a heavy braising pot. Brown roulades on all sides over high heat — 8 minutes.
  5. 5
Remove roulades. Roast remaining onion and tomato paste in the same pot, 3 minutes.
  6. 6
Stir in red wine and reduce. Add broth, thyme, and bay leaf.
  7. 7
Stir in cannabis butter. Place roulades in the sauce — they should be half-covered.
  8. 8
Cover and braise in the oven at 320°F (160°C) for 90 minutes. Turn every 30 minutes.
  9. 9
Remove roulades, strain sauce through a sieve. Thicken with slurried cornstarch.
  10. 10
Remove toothpicks. Serve with dumplings, red cabbage, and potatoes.

Pro Tips

  • The hard sear is crucial — without browning flavor, the sauce lacks depth.
  • Add cannabis butter to the sauce, not during browning — high heat would destroy THC.
  • Leftovers taste better the next day: sauce condenses overnight to a more intense consistency.
