Instructions

    Cut tofu into 3/4 inch (2 cm) cubes. Soak in gently salted warm water for 10 minutes — stabilizes it during cooking.

    Toast Sichuan peppercorns in a dry pan and grind finely.

    Heat oil in a wok. Sear ground pork over high heat until browned and crumbly.

    Stir in doubanjiang and douchi paste — toast over high heat for 2 minutes until the oil turns red.

    Add garlic and ginger, toast for 1 minute.

    Pour in broth and bring to a boil.

    Stir in soy sauce. Dissolve cornstarch in 2 tbsp cold water, stir in until sauce lightly thickens.
