Instructions

    Spice paste: Pound shallots, garlic, candlenuts, coriander seeds and turmeric in a mortar until fine.

    Fry spice paste in 2 tbsp oil for 3 minutes until fragrant and darkened.

    Add chicken, lemongrass, galangal and water. Bring to a boil, skim foam. Simmer 30 minutes over low heat.

    Remove chicken, cool, shred into strands. Strain broth through a sieve.

    Season broth with fish sauce. The color should be bright golden yellow.

    Add rice noodles to hot broth, let sit 2 minutes.

    Arrange in bowls: rice noodles, shredded chicken, halved egg. Pour broth over.

    Top with crispy shallots, cilantro and cannabis sesame oil while cold. Lime and sambal on the side.
