    Caramelize onions — the long way: slice 3.3 lbs (1.5kg) onions into thin half-moons. Heat 1.75 oz (50g) cannabutter and 2 tbsp olive oil in a wide, heavy pot (cast iron!). Stir in onions with 1 tsp salt and 1/2 tsp sugar. Caramelize over medium heat WITHOUT A LID — this takes 45–60 minutes, not 10. Stir regularly, every 5–7 minutes. Beginning: translucent. Middle: golden yellow. End: deep brown, sweet-savory, reduced to 1/4 volume. This is the soul of Soupe à l'Oignon.

    Deglaze and build the broth: add 5 fl oz (150ml) dry white wine (or cognac, or both) to the caramelized onions. Bring to a boil and simmer for 3 minutes while stirring — loosen all browned bits from the bottom. Pour in 1.5 quarts (1.5 liters) of strong beef broth (homemade is ideal, but good organic broth works too). Add 2 bay leaves and 3 thyme sprigs. Simmer over medium heat for 20 minutes. Taste and adjust with salt, pepper, and a splash of Worcestershire sauce.

    Prepare croutons: slice baguette into 3/4-inch (2cm) thick slices. In the oven at 392°F (200°C) on a rack for 8–10 minutes until golden brown — both sides. While still warm, rub with a garlic clove. Prepare Gruyère (3.5–5.3 oz / 100–150g, coarsely grated). Alternatively: Comté or Emmental, but Gruyère has the necessary melting characteristics.

    Gratinée — the final step: place oven-safe bowls or soup cups on a baking sheet. Ladle hot soup into them. Place 1–2 croutons on top — they should cover the soup. Generously grate Gruyère over them, really thick (no stinginess here). Under the broiler or at 428°F (220°C) top heat for 5–8 minutes until the cheese is completely melted, bubbling, and lightly golden in spots. Serve immediately — the cheese moment is everything.
