50 g 1.8 oz Pecorino Romano, grated

Instructions

1Cook spaghetti in abundant salted water until al dente (reserve 1 cup pasta water!).

2Dice guanciale and cook in a pan without additional fat until crispy.

3Whisk egg yolks with grated Pecorino Romano, Parmesan, and cannabis olive oil in a bowl.

4Remove pan from heat. Add spaghetti directly from the water into the pan.

5Pour egg yolk mixture over the pasta, stir in some pasta water to create a creamy sauce.

6The residual heat of the pasta cooks the sauce — DO NOT use direct heat anymore!

7Serve with plenty of black pepper and extra Pecorino Romano.
