Instructions

    Precook potatoes in salted water for 15 minutes until almost tender. Cool, peel, slice into ⅕ inch (5 mm) thickness.

    Fry bacon in a skillet without added fat until crispy. Remove. Caramelize onions in the bacon fat for 10 minutes.

    Add white wine, bring to a boil, reduce to half. Stir in crème fraîche.

    Preheat oven to 400°F (200°C). Rub a baking dish with a garlic clove.

    Melt cannabis butter and regular butter (below 140°F/70°C!). Toss potato slices in the mixture.

    Layer: potatoes, bacon-onion sauce, potatoes, bacon-onion sauce. Finish with the cannabis butter potatoes.

    Place reblochon rind-side up on top of the gratin. Bake for 25-30 minutes until the cheese is completely melted and golden brown.
