Instructions

1Cook fresh tagliatelle in plenty of salted water for 2–3 minutes (al dente). Reserve 2 cups of pasta water.

2Melt truffle butter and regular butter in a wide pan over low heat.

3Add garlic clove, let it infuse very gently for 2 minutes — do not brown. Remove garlic.

4Add pasta (not fully drained) directly to the butter. Stir in truffle cream.

5Work in Parmesan in portions, alternating with pasta water. Create a creamy emulsion.

7Plate in deep, prewarmed bowls. Drizzle truffle oil over top.
