0.5 tsp 0.5 tsp White pepper (not black — vichyssoise stays white!)

Instructions

1Melt cannabutter in a pot. Soften leeks and onion for 10 min. over low heat — do not brown.

2Add potatoes. Pour in broth. Simmer for 20 min.

3Remove from heat. Stir in crème fraîche.

4Purée finely with an immersion blender. Strain through a fine sieve — this makes vichyssoise silky.

5Stir in heavy cream. Season with salt, white pepper, and nutmeg.

6For cold version: Cool + chill for 2 hrs. Serve with chives.

7Warm: Reheat gently — do not bring to a boil. Serve immediately.
