Instructions

    Place schnitzel between plastic wrap and pound to 1/8-inch (3-4mm) thickness. Salt.

    Coat with flour, beaten egg, and breadcrumbs. Do NOT press the coating.

    Heat clarified butter or oil to 338°F (170°C) (about 1 finger-width deep). Fry schnitzel floating in oil for 2-3 minutes per side.

    Drain on paper towels. Serve immediately.
