50 ml 3.4 tbsp Sake (or dry sherry)

2 tbsp 2 tbsp Brown sugar

1 tsp 1 tsp Sesame oil

8 piece 8 piece Scallions (cut into 1¼-inch (3cm) pieces)

12 piece 12 piece Wooden skewers (soaked 30 minutes)

1 tsp 1 tsp Sansho pepper or Shichimi (for garnish)

1 tbsp 1 tbsp Sesame seeds (toasted)

1Tare: Combine soy sauce, mirin, sake, and sugar. Bring to a boil. Reduce for 5 minutes until slightly syrupy.

2Stir in cannabutter once tare has cooled to 140°F (60°C) — never add to boiling sauce.

3Thread chicken and scallions alternately onto skewers.

4Preheat grill or grill pan to high heat.

5Grill skewers for 4 minutes. Flip.

6Brush generously with tare. Cook for another 4 minutes.

7Brush again. Caramelize for 2 minutes.
