Instructions

  1. 1
In a pot, render pancetta over medium heat without oil until crispy. Remove and set aside.
  2. 2
In the pancetta fat, cook onion for 5 minutes until translucent. Add garlic, rosemary, and bay leaf, cook 1 minute more.
  3. 3
Add potato cubes, brown briefly. Pour in vegetable broth, bring to a boil.
  4. 4
Add cannellini beans. Simmer 15 minutes at medium heat until potatoes are tender.
  5. 5
Ladle out one-third of the soup and puree — this creates a creamy base without pureeing everything.
  6. 6
Pour puree back in. Stir in kale or Cavolo Nero, simmer 10 minutes until tender. Season to taste.
  7. 7
Place toasted bread in deep soup bowls. Pour hot soup over. Top with pancetta.
  8. 8
Sprinkle with Pecorino and chili flakes. Drizzle cannabis-infused olive oil as cold finish — never heat!

Pro Tips

  • Cavolo Nero (Tuscan kale) is more authentic than regular kale and available in well-stocked supermarkets.
  • ALWAYS add cannabis-infused olive oil cold and directly before serving — heat destroys THC uptake.
  • Zuppa Toscana tastes even better the next day: flavors deepen, bread softens.
  • Skip the cured meat if you prefer: beans and kale combination is complete on its own.
