Instructions

  1. 1
Place beef in large chunks in a pot. Cover with water, add onion, garlic, cumin, oregano, and bay leaves.
  2. 2
Bring to a boil, skim foam. Simmer over medium heat for 2 hours until meat is fall-apart tender.
  3. 3
Remove meat and shred finely. In a pan with some cooking fat, sear over high heat until edges are crispy — that's suadero style.
  4. 4
Salsa verde: Simmer tomatillos with jalapeños, half an onion, and salt for 10 minutes. Puree with cilantro and lime in a blender.
  5. 5
Stir cold cannabis coconut oil into the salsa verde.
  6. 6
Warm tortillas directly over a gas flame or in a dry pan.
  7. 7
Fill tacos: shredded beef, cannabis salsa verde, finely chopped white onion, cilantro, lime juice.

Pro Tips

  • The crispy pan-sear at the end is what sets this apart from ordinary pulled beef — texture contrast.
  • Tomatillo salsa verde is the heart of this dish — don't substitute with tomato sauce.
  • Cannabis coconut oil in the salsa verde: the acidity of tomatillos pairs well with coconut oil.
  • Street tacos are small and simple: no cheese, no lettuce — just meat, salsa, onion, cilantro.
