Instructions

    Chai infusion: Heat 17 oz (500 ml) heavy cream with 2 cinnamon sticks, 6 cardamom pods (crushed), 4 cloves, 1 tsp black peppercorns (coarsely ground), 2 star anise, and 1 tbsp fresh ginger (grated) on low heat for 20 minutes—do not boil. Strain through fine sieve. The cream absorbs all the spice flavors.

    Dissolve gelatin: Soak 4 gelatin sheets (or 1 tsp agar for vegan version) in cold water for 5 minutes. Warm chai cream to 140°F (60°C). Squeeze out gelatin and completely dissolve in warm cream—stir well. Do not boil: gelatin loses binding power above 176°F (80°C).

    Incorporate cannabis infusion: Stir 3–4 tbsp cannabis oil (MCT oil base—dissolves especially well in cream) into the warm chai cream. Stir in 2.8 oz (80 g) sugar or maple syrup until dissolved. Cool until cream is lukewarm (40°C/104°F). Then pour into molds or glasses.

    Chill and unmold: Refrigerate molds at least 4 hours, preferably overnight until set. To unmold: briefly (10 seconds) dip mold in hot water, run a knife around the edge, and turn out onto a plate. Panna cotta should jiggle but hold its shape—that's the right balance.
