Instructions

  1. 1
Soak wooden skewers in water 30 minutes to prevent burning.
  2. 2
Cut chicken into long strips (about 0.75 inches / 2 cm wide). Prepare marinade: mix coconut milk, turmeric, cumin, coriander powder, minced garlic, ginger, soy sauce, and sugar.
  3. 3
Marinate chicken at least 30 minutes (better: 2 hours) in the refrigerator.
  4. 4
Prepare peanut sauce: mix peanut butter with coconut milk, lime juice, sriracha, and fish sauce until creamy. Thin with water to desired consistency. Refrigerate.
  5. 5
Thread chicken onto skewers (gently meandering).
  6. 6
Heat grill pan or grill to high heat. Grill skewers 3–4 minutes per side until nicely browned and cooked through.
  7. 7
Stir cold cannabis coconut oil into peanut sauce—just before serving, never heat it.
  8. 8
Serve satay skewers with cannabis peanut sauce for dipping. Garnish with fresh cilantro and lime.

Pro Tips

  • Satay lives on the Maillard reaction: heat must be high for beautiful browning.
  • Mix cannabis coconut oil into the dip sauce—the effect comes naturally with the meal.
  • No fish sauce? Simply use more soy sauce.
  • Peanut sauce keeps in the fridge 3–4 days—thin with water when reheating.
