Instructions

  1. 1
Cut chicken into 1¼ inch (3 cm) cubes. Marinate with olive oil, lemon juice, minced garlic, oregano, paprika, salt and pepper — at least 30 minutes.
  2. 2
Prepare tzatziki: Coarsely grate cucumber and squeeze out excess moisture. Mix with Greek yogurt, 1 garlic clove, dill, and salt.
  3. 3
Soak wooden skewers. Thread chicken cubes onto skewers.
  4. 4
Heat grill pan to high heat. Grill souvlaki skewers 3–4 minutes per side until browned and cooked through.
  5. 5
Warm pita bread briefly on the grill pan.
  6. 6
Stir cold cannabis olive oil into the tzatziki — just before assembling.
  7. 7
Assemble: Spread cannabis tzatziki on pita, add lettuce, tomato slices and onion rings, souvlaki pieces from skewer.
  8. 8
    Roll up and serve immediately.

Pro Tips

  • The lemon and oregano marinade is classically Greek — at least 30 minutes, better overnight.
  • True souvlaki quality comes from grill heat — caramelization is essential.
  • Cannabis olive oil in tzatziki: herbs and oil blend perfectly — barely noticeable.
  • Souvlaki vs. gyros: souvlaki are skewers, gyros are rotisserie — both served on pita.
