Instructions

  1. 1
Choux pastry for churros: Bring 1 cup (250ml) water to a boil. Stir in 2 cups (250g) flour all at once, stir immediately and vigorously until dough forms a smooth ball and no longer sticks to the sides (choux pastry technique). Remove from heat, cool briefly (5 minutes), then incorporate 3 eggs one at a time completely — dough should be glossy and smooth. Stir in 1 tbsp cannabis oil.
  2. 2
Piping and frying: Transfer dough to a piping bag with a star tip (0.6–0.8 inch opening — the ridges are characteristic). Heat oil to 356°F (180°C). Pipe churros directly into oil in 4–5 inch pieces. Fry 3–4 minutes per side until golden brown. Drain on paper towels. While still warm, roll in cinnamon-sugar mix (3.5 oz/100g sugar + 1 tbsp cinnamon).
  3. 3
Cannabis chocolate dip: Roughly chop 7 oz (200g) dark chocolate (minimum 60%). Heat 5 fl oz (150ml) cream (do not boil). Pour over chocolate, let sit 2 minutes, then stir until smooth ganache forms. Stir in 2 tbsp cannabutter and emulsify completely. Add a pinch of cayenne pepper for depth. Serve warm.
  4. 4
Cannabis dosing: The cannabis is in the churro dough (cannabis oil) AND in the dip sauce (cannabutter). For less: infuse only one component. Divide the double dosage evenly across all pieces — important when portioning for multiple people.

Pro Tips

  • Mix cannabis oil evenly throughout. Adjust dosage — start with less rather than more.
