Instructions

    Cook caramel: Heat 5.3 oz (150g) sugar with 3 tbsp water in small pot over medium-high heat — DO NOT stir, only swirl. When sugar turns golden brown (338°F/170°C, amber-colored), immediately remove from heat and pour into prewarmed ramekins. Work quickly — caramel hardens in seconds. Swirl ramekins so bottoms are evenly coated. Caramel becomes sauce when inverted.

    Prepare vanilla custard: Slowly heat 17 oz (500ml) whole milk + 5 oz (150ml) cream with 1 split vanilla bean until just before boiling. Do not boil! Remove vanilla bean. Cream 4 eggs + 2 egg yolks with 3.5 oz (100g) sugar (or 2.8 oz/80g if you prefer sweet caramel contrast) until fluffy. Pour hot milk in thin stream into eggs while stirring constantly — never the other way, or you'll make scrambled eggs. Stir in room-temperature cannabis butter into still-warm mixture. Strain through fine sieve.

    Bake in water bath: Fill ramekins (with caramel on bottom) 3/4 with custard mixture. Place in deep baking pan, fill with boiling water halfway up ramekins. Bake at 302°F (150°C) with top and bottom heat for 35–45 minutes. Test: Gently shake ramekin — center should still jiggle slightly (like jello), but not be liquid. Residual heat finishes cooking.

    Chill and invert: Cool crème caramel at room temperature for 30 minutes, then refrigerate at least 4 hours (preferably overnight). To invert: Run knife along edge of ramekin, place deep plate on top and invert with quick motion. Caramel flows down as glossy sauce. Cannabis onset: 60–90 minutes due to fat and egg proteins.
