Instructions

  1. 1
Mix tonkatsu sauce: stir together Worcestershire, ketchup, and soy sauce. Set aside.
  2. 2
Mix Kewpie mayo and cannabis sesame oil cold — this becomes your cannabis mayo.
  3. 3
Pound pork between plastic wrap to about 0.4 inches (1 cm). Season with salt and pepper.
  4. 4
Triple-bread: flour → egg → panko (press firmly).
  5. 5
Heat oil to 338°F (170°C). Fry cutlet 3–4 minutes per side until golden brown. Drain on paper towels, rest 2 minutes.
  6. 6
Slice cutlet diagonally or straight into strips.
  7. 7
Spread cannabis mayo generously on both bread slices.
  8. 8
Layer: thinly sliced white cabbage, katsu strips, tonkatsu sauce on top.
  9. 9
Top bread, press lightly. Trim crusts (optional, but traditional). Halve and serve immediately.

Pro Tips

  • Kewpie mayonnaise (Japanese, egg yolk-based) makes the difference — creamier and richer than regular mayo.
  • Trimming crusts is not luxury, but tradition in katsu sando — makes the sandwich more compact.
  • Cannabis sesame oil in the mayo adds a nutty hint that pairs perfectly with the panko crust.
  • Buy milk bread (Shokupan) at Asian markets — fluffier and sweeter than regular sandwich bread.
