1Select and prepare salmon: 300g salmon fillet without skin, sushi-grade (suitable for raw consumption — frozen wild salmon is the most hygienic option). Freeze for at least 24 hours at -64°F (-18°C) → thaw. Cut semi-frozen salmon with a very sharp knife into 5mm cubes — do not mince, cut. Texture is everything in tartare.

2Cannabis marinade: 3 tbsp cannabis oil (mild, cold-pressed — do not heat!), 1 tbsp extra virgin olive oil, 1 tsp Dijon mustard, 1 tbsp capers (finely chopped), 1 tsp lemon zest, 2 tbsp fresh lemon juice, 1 shallot (very finely diced), 2 tbsp fresh dill, salt, white pepper, 1 tsp honey. Whisk until emulsified.

3Marinate: Gently mix salmon cubes with cannabis marinade — the cubes should not break apart. Cover and let sit in the refrigerator for 15–20 minutes. No longer — citric acid will "cure" the salmon similar to ceviche. The tartare should still be deep red when served.

4Plate: Place an 8cm plating ring on the plate, fill with tartare and press lightly. Remove ring. Toppings: fresh dill, capers, microgreens, paper-thin cucumber ribbons made with a vegetable peeler. Serve with: toast slices or blinis. Cannabis onset: 45–75 minutes due to the oil in the marinade.
