1Peel onion. Cut off top, leaving root end intact. Make 12–16 even cuts from the top down to about 3/4 inch (2 cm) from the root end — onion should bloom but stay together.

2Soak onion in ice-cold water for 30 minutes to allow it to bloom.

3Mix flour with paprika, garlic powder, cayenne, and oregano. Whisk eggs with buttermilk.

4Drain onion well. Coat in flour mixture, covering all petals. Dip in egg-buttermilk mixture. Coat again in flour mixture.

5Heat oil to 350°F (175°C). Fry onion bloom-side down for 10 minutes. Flip and fry for another 3–4 minutes until golden brown.

6Melt cannabis butter. Mix with mayo, horseradish, ketchup, and paprika to make cannabis dipping sauce.

7Arrange Blooming Onion on a plate with sauce in the center.
