    Cook octopus until tender — the copper method: 1 octopus (about 2.2–3.3 lbs/1–1.5kg), cleaned and ready. Bring a large pot of salted water to a boil. Traditionally: add a bare copper penny to the water (copper ions help tenderize — not a myth). Dip the octopus 3 times into the boiling water and remove it ("scare" it — the outer skin contracts). Then place it completely in the water, reduce to low heat, and simmer for 45–60 minutes until a metal skewer pierces it without resistance. Let it cool completely in the cooking water.

    Make paprika-cannabis oil: Infuse 3.4 fl oz (100ml) of best quality olive oil on very low heat (max. 158°F/70°C) with 1 tsp sweet smoked paprika (Pimentón de la Vera Dulce), 1/4 tsp hot paprika, and 0.1 oz (2–3g) cannabis butter for 30 minutes. Do not overheat! This is the heart of the dish. The terpenes in cannabis pair especially well with smoked paprika. Season with salt.

    Prepare potatoes: Cook 4–5 medium waxy potatoes (Galician-style: small round varieties) with skins in salted water until tender. Shock with cold water, peel, and slice into 1/3 inch (1cm) pieces. Arrange on a wooden board — Pulpo á Feira is traditionally served on wood.

    Plate á la Feira: Arrange potato slices on the wooden board (or large plate). Slice octopus into 1.5–2cm pieces (safety glasses worth it — it splashes). Distribute evenly over the potatoes. Generously drizzle with the paprika-cannabis oil. Top with coarse sea salt (Fleur de Sel). Add more hot paprika to taste if desired. Serve immediately while warm. Cannabis onset: 60–90 minutes due to the olive oil.
