Instructions

  1. 1
Marinade paste: Puree lemongrass, shallots, garlic, turmeric, and coriander in a blender. Mix with soy sauce and sugar.
  2. 2
Marinate meat strips in the marinade for 2 hours (or overnight).
  3. 3
Cannabis peanut sauce: Heat coconut milk. Stir in peanuts, tamarind, palm sugar, and sambal. Simmer for 5 minutes until sauce thickens. Remove from heat.
  4. 4
Stir Cannabis coconut oil into the sauce once it has cooled below 149°F (65°C).
  5. 5
Thread meat onto skewers — 4-5 pieces per skewer, slightly overlapping.
  6. 6
Grill on a very hot grill or grill pan for 2-3 minutes per side until light char marks appear.
  7. 7
Serve immediately with warm Cannabis peanut sauce. Serve with ketupat (rice cakes) or cucumber.

Pro Tips

  • Stir Cannabis coconut oil into the sauce after cooking — sauce must cool below 149°F (65°C).
  • Soak skewers beforehand so they don't burn.
  • A truly hot grill creates those char marks — satay should never be steamed.
  • Sauce can be made a day ahead — it actually improves when reheated.
