1Flammkuchen dough (no yeast): Mix 8.8 oz (250g) flour, 1/2 tsp salt, 4 tbsp ZenOil, and 3.4 fl oz (100ml) lukewarm water into a smooth, elastic dough (no yeast! — Flammkuchen dough is a flatbread, thin and crispy). Let rest for 30 minutes. Then roll out paper-thin — as thin as possible, about 1/12 inch (2–3mm). This is the most critical step for authentic Tarte Flambée.

2Crème fraîche topping: Mix 7 oz (200g) crème fraîche or sour cream with 1 tbsp ZenOil, and season assertively with salt, white pepper, and nutmeg. The cream carries the main flavor — it should be intensely tangy. Spread thinly and evenly all the way to the edges of the dough.

3Alsatian topping: Slice 2 medium onions paper-thin. Add 5.3 oz (150g) diced smoked bacon (traditional lardons). Spread raw onions over the cream — they'll cook during the short baking time and retain a slight bite. Distribute bacon evenly.

4Bake at maximum temperature: Preheat oven to maximum (572°F (300°C) with top and bottom heat). Preheat a pizza stone or baking sheet alongside. Place Tarte Flambée directly on the hot stone and bake for 6–8 minutes until the crust is charred and crispy and the cream begins to bubble. The tart should be spotted and blackened — that's intentional.

5Serve immediately: Tarte Flambée loses its crispness quickly. Never cut it — traditionally you break off pieces. Garnish with fresh chives. Cannabis is evenly distributed in the cream and dough. Onset: 60 minutes. No Alsatian dinner is complete without Pinot Blanc or Riesling.
