Instructions

    Curd dumpling dough: 1 lb (500g) curd cheese (Austrian quark, low-fat, well-drained — too moist curd makes soft dumplings), 3 eggs, 2.8 oz (80g) soft cannabutter, 2.1 oz (60g) semolina (durum wheat semolina), 1.4 oz (40g) flour, pinch of salt, zest of half a lemon, a little vanilla sugar. Mix all ingredients quickly into a dough — do not overknead. Let rest in the refrigerator for 30 minutes. The semolina will swell and provide binding.

    Form and cook dumplings: With floured hands, form uniform balls from the curd mixture (approx. 2 inches / 5cm diameter, tennis ball size). In lightly salted water (DO NOT boil — this is the most common mistake!) at approx. 194°F (90°C) for 12–15 minutes, let them gently poach. The water should simmer quietly, not bubble — otherwise the dumplings will burst. When they rise to the surface and have puffed up slightly, they're done.

    Buttered breadcrumb coating: Heat 2.1 oz (60g) butter in a pan until foamy, toast 2.8 oz (80g) breadcrumbs until golden brown. Stir in 1–2 tbsp sugar (will caramelize slightly). Lift dumplings from water, let drain briefly, immediately roll in the buttered breadcrumbs. The breadcrumbs stick better when the dumplings are still steaming hot.

    Plating: 2–3 dumplings per person, plenty of buttered breadcrumbs on top. Dust with powdered sugar through a sieve. Traditionally served with fresh strawberry compote (strawberries + sugar + lemon, lightly cooked). Sour cream or whipped cream on the side. Cannabis onset: 60–90 minutes due to fat in cannabutter and curd cheese.
