Instructions

  1. 1
Sponge cake base: Separate 5 eggs. Whip egg yolks with 3.5 oz (100g) sugar until creamy (ribbon stage). Whip egg whites with a pinch of salt until stiff peaks form, then sprinkle in 1.8 oz (50g) sugar. Sift together flour (4.2 oz / 120g) and baking powder (1 tsp). Fold egg yolk mixture and egg white foam alternately with flour—light and airy. Bake in a 9x13 in (23x33cm) pan at 347°F (175°C) for 25 minutes.
  2. 2
Cannabis Tres Leches Mix: "Three milks"—the soul of the cake. Mix 13.5 fl oz (400ml) sweetened condensed milk, 13.5 fl oz (400ml) evaporated milk, 6.8 fl oz (200ml) heavy cream, 4 tbsp cannabis oil (MCT-based—emulsifies optimally in milk fats), 1 tsp vanilla extract, and 1 tbsp dark rum. Whisk well.
  3. 3
Soaking: Remove warm cake from pan. Perforate densely with a wooden skewer or fork—every centimeter. Pour the milk mixture over the cake in spoonfuls and let it soak in. Don't add it all at once—do it in 3–4 batches with 5-minute waits between. The cake should be incredibly moist but not fall apart.
  4. 4
Chilling: Cover and refrigerate for at least 4 hours, preferably overnight. The cake continues to absorb. The next day: noticeably juicier, deeper flavors. Tres Leches is one of the few cake recipes where overnight resting is essential.
  5. 5
Whipped cream topping: Whip 13.5 fl oz (400ml) heavy cream with 3 tbsp powdered sugar and 1 tsp vanilla until soft and creamy (not stiff). Spread over chilled cake. Garnish with fresh berries, coconut flakes, or caramel sauce. Serve and plate pieces immediately. Onset: 60–90 minutes.
