Instructions

    Cook rice vermicelli according to package directions (about 3 minutes), rinse with cold water, and drain.

    Cut cucumber and carrot into fine julienne strips. Slice avocado.

    Prepare peanut dip: Mix peanut butter with hoisin sauce, coconut milk, lime juice, and sriracha until creamy. Thin with water to dip consistency.

    For each roll: Soak rice paper in warm water for 5–10 seconds until soft (don't oversoak — it becomes sticky).

    Lay flat on a damp board. Fill the bottom third: lettuce, vermicelli, cucumber, carrot, avocado, mint, cilantro.

    Arrange shrimp in a line in the upper area (visible through the transparent paper).
