Instructions

    Melt chocolate over a double boiler. Cool slightly (to about 40°C / 104°F).

    Whisk egg yolks with sugar until light and creamy.

    Stir cooled chocolate and Baileys into the egg yolk mixture. Add vanilla.

    Whip egg whites until stiff peaks form (with a pinch of salt).

    Gently fold cream into the chocolate mixture first, then fold in egg whites — use a spatula, not a whisk.
