Instructions

  1. 1
Braise chicken with onions, ginger, saffron, cumin, turmeric, and parsley in 2 cups (500 ml) water for 45 minutes.
  2. 2
Remove chicken, let cool, remove bones, and shred finely.
  3. 3
Reduce braising liquid. Stir in eggs and let set — creates a bound egg-onion mixture.
  4. 4
Chop almonds and mix with powdered sugar + 1 tsp cinnamon.
  5. 5
Mix cannabutter with regular butter. Brush phyllo sheets individually with it.
  6. 6
Grease a 28 cm (11 inch) baking dish. Layer 4 phyllo sheets overlapping, letting edges overhang.
  7. 7
Almond layer as base, then meat, then egg mixture, almonds again on top.
  8. 8
Fold edges inward, place remaining 4 phyllo sheets on top, brush again with cannabis butter.
  9. 9
Bake at 350°F (180°C) for 30–35 minutes until golden brown.
  10. 10
From oven: dust heavily with powdered sugar-cinnamon mixture. Serve hot.

Pro Tips

  • Bastilla combines sweet and savory — this is old-school Moroccan holiday cooking.
  • Phyllo dough dries quickly: always cover with a damp cloth.
  • Cannabis goes into the butter for brushing — even distribution across all layers.
