Instructions

  1. 1
Dissolve yeast in lukewarm water with sugar, let sit 5 minutes until foamy.
  2. 2
Add flour to bowl, mix in salt. Add yeast water and softened cannabis butter.
  3. 3
Knead intensively 8-10 minutes until dough is smooth, elastic, and no longer sticky.
  4. 4
Cover and let rise in warm place 45-60 minutes until doubled.
  5. 5
Divide dough into 8 equal portions (~3.5 oz / 100g each). Roll each into a 24-28 inch (60-70cm) rope — thicker in middle, thinner at ends.
  6. 6
Form pretzel: Cross ends, wrap around again, press to sides.
  7. 7
Let dry in refrigerator 15 minutes — important for lye bath treatment.
  8. 8
Baking soda bath: Boil water, stir in baking soda (froths heavily!). Reduce to medium heat.
  9. 9
Dip each pretzel 30 seconds in baking soda bath, remove with slotted spoon.
  10. 10
Place on parchment paper, immediately sprinkle with coarse salt.
  11. 11
Bake at 425°F (220°C) with top and bottom heat 15-18 minutes until deep brown. Brush with butter while still warm.

Pro Tips

  • The baking soda bath (not true lye) gives the typical pretzel color and characteristic flavor.
  • Dough rolling technique: Start in middle, work outward. Thin ends become crispy, the center stays soft.
  • Cannabis butter in dough — baking at 425°F (220°C) causes some THC loss, but significantly less than frying.
