Instructions

1Preheat oven to 300°F (150°C). Place four ramekins in a deep baking dish.

2Slowly heat cream with split vanilla bean and vanilla seeds until just before boiling. Remove from heat, let steep 10 minutes.

3Cream egg yolks with sugar and salt — do not whip into foam.

4Stir cannabis oil into cooled cream (max 140°F / 60°C, otherwise it breaks).

5Remove vanilla bean. Slowly add cream-cannabis mixture to egg yolk mixture while stirring constantly.

6Strain through fine sieve into ramekins.

7Pour hot water into baking dish until halfway up ramekins — water bath prevents curdling.

8Bake 45-55 minutes until cream jiggles slightly only in center. Cool, refrigerate minimum 3 hours.

9Just before serving: Distribute 1 tsp brown sugar evenly on each crème. Caramelize with kitchen torch until deep brown and glossy — 3-4 layers for maximum crunch.
