Instructions

  1. 1
Bring water, butter, and salt to a boil. Add flour all at once and stir until a ball forms and pulls away from the pot sides.
  2. 2
Cool slightly, then stir in eggs one at a time until batter is glossy.
  3. 3
Pipe long strips (about 5 inches/12cm) onto a baking sheet.
  4. 4
Bake at 392°F (200°C) for 25-30 minutes — DO NOT open oven during baking.
  5. 5
For cream: heat milk. Whisk together egg yolks, sugar, and cornstarch.
  6. 6
Stir in hot milk, return to heat, and stir until thickened.
  7. 7
Fold in cannabis butter and vanilla, then cool.
  8. 8
Once cooled, slice eclairs lengthwise and fill with cream.
  9. 9
    Glaze with melted chocolate.

Pro Tips

  • Never open the oven during baking — eclairs will collapse.
  • Choux pastry must cool completely before adding eggs.
  • Fill just before serving to keep the shell crispy.
