Instructions
-
1Dissolve yeast and sugar in water, let stand 5 min until foam forms.
-
2Mix flour and salt. Add yeast water and 1 fl oz (30ml) cannabis olive oil.
-
3Stir 3-4 min into soft, sticky dough — no kneading for focaccia.
-
4Cover, let rise 1 hour until doubled.
-
5Brush baking sheet with regular olive oil. Dump dough on sheet, gently press into all corners.
-
6Let rest 30 min. Drizzle remaining cannabis olive oil over dough.
-
7Press fingers deep into dough — this creates the typical focaccia dimples.
-
8Press rosemary, tomatoes, and olives into dough. Sprinkle fleur de sel generously on top.
-
9Preheat oven to 425°F (220°C) and bake 20-25 min until golden brown. Serve warm.
Pro Tips
- More oil is more — focaccia should swim in it. Don't skimp on oil, that's the bread's character.
- Make cannabis olive oil yourself: Infuse olive oil with decarboxylated cannabis at 176°F (80°C) for 2 hours.
- For maximum airiness: Let dough rise overnight in refrigerator (cold fermentation) — more complex flavor.
