400 g 14.1 oz Kataifi dough (angel hair, frozen section)

80 g 2.8 oz Cannabutter (melted)

400 g 14.1 oz Ricotta or Akkawi cheese

200 g 7.1 oz Mozzarella (shredded)

300 ml 1.27 cup Water

250 g 8.8 oz Sugar

1 tbsp 1 tbsp Rose water

1 tbsp 1 tbsp Lemon juice

3 tbsp 3 tbsp Pistachios (chopped, for garnish)

1 tsp 1 tsp Orange blossom water (optional)

Instructions

1Syrup: Bring sugar and water to a boil. Simmer for 10 minutes. Add rose water and lemon. Cool completely.

2Thaw kataifi dough. Work in cannabutter — every strand must have fat distributed through it.

3Press half the dough into a buttered baking dish (9.5 in / 24cm).

4Spread cheese filling (ricotta and mozzarella mixed) over the dough.

5Layer remaining dough on top — press down firmly.

6Bake at 350°F (180°C) for 35–40 minutes until golden brown.

7IMMEDIATELY after baking, pour cold syrup over hot kunafa.

8Let sit for 5 minutes. Flip onto plate. Garnish with pistachios. Serve warm.
