Instructions
-
1Preheat oven to 350°F (175°C) with conventional heat. Bring cannabis infusion to room temperature. Grease baking pan and dust with flour.
-
2Mix all dry ingredients (7 oz / 200g butter cookies, 2.8 oz / 80g cannabis-infused butter (melted), For the caramel:, 7 oz / 200g sugar) in a large bowl. In a second bowl, whisk together wet ingredients.
-
3Gently combine dry and wet ingredients — don't overmix or the batter will become tough. Evenly incorporate cannabis infusion.
-
4Pour batter into prepared pan and bake in preheated oven for 25-35 minutes. Perform toothpick test: dry toothpick = done.
-
5Remove from oven, cool in pan for 10 minutes, then turn out onto a cooling rack. Cool completely before serving.
Pro Tips
- Pour caramel hot onto cookie base — it sets as it cools. Cornflakes provide the Lion bar's signature crunch. Cannabis butter goes into caramel only, not the base.
