Instructions

1Grind almonds and powdered sugar finely and sift. Mix with first egg white.

2Cook sugar syrup (water + sugar to 244°F (118°C)). Whip second egg white until stiff.

3Pour hot syrup in slowly (Italian meringue) and whip to glossy foam.

4Fold meringue with almond mixture (macaronage) until lava-like consistency.

5Pipe onto parchment paper, let dry 30 minutes. Bake at 302°F (150°C) for 13–15 minutes.
