1Joconde sponge (3 layers): Beat 7 oz (200g) ground almonds + 7 oz (200g) powdered sugar + 4 eggs in food processor for 5 minutes until light and foamy. Fold in 1 oz (30g) sifted flour. Separately, whip 4 egg whites + 1.4 oz (40g) sugar until stiff peaks form, carefully fold into almond mixture. Divide into 3 equal portions, spread thinly on parchment (12x16 inches). Bake each 8 minutes at 392°F (200°C) with convection. Cool completely and turn out onto foil.

2Coffee syrup: Bring 3.5 oz (100g) sugar + 3.4 fl oz (100ml) water to boil, stir in 3 tbsp strong espresso. Optional: 1 tbsp Cognac. Cool. This syrup soaks the sponge—it should be moist but not soggy.

3Cannabis coffee buttercream: Beat 5.3 oz (150g) softened cannabis butter (room temperature!) + 5.3 oz (150g) regular butter until fluffy (5-7 minutes—longer is lighter and airier). Add 7 oz (200g) powdered sugar by the spoonful. Stir in 3 tbsp concentrated cold espresso and 1 tbsp coffee liqueur to taste. Buttercream should be fluffy, smooth, and intensely coffee flavored.

4Chocolate ganache: Finely chop 7 oz (200g) dark chocolate couverture (70% cacao). Bring 6.8 fl oz (200ml) heavy cream to boil, immediately remove from heat, pour over chocolate, wait 2 minutes, then stir from center outward until smooth. Cool at room temperature to spreadable consistency (about 30-40 minutes).

5Assembly: Place first sponge layer on serving plate/cake board. Generously soak with coffee syrup. Spread half the coffee buttercream evenly (use offset spatula). Top with second sponge layer, soak, spread entire ganache. Add third layer, soak, top with remaining buttercream. Smooth surface. Chill at least 4 hours (preferably overnight). Then: Pour dark chocolate glaze (3.5 oz/100g couverture + 2.7 fl oz/80ml cream) over torte. Decorate with gold leaf as "Opéra" lettering.
