  • 40 g 1.4 oz Butter (regular)
  • 150 g 5.3 oz All-purpose flour
  • 4 piece 4 piece Eggs (room temperature)

  • 500 ml 2.11 cups Milk (for vanilla cream)
  • 4 piece 4 piece Egg yolks (for vanilla cream)
  • 100 g 3.5 oz Sugar (for vanilla cream)
  • 40 g 1.4 oz Cornstarch (for vanilla cream)
  • 1 piece 1 piece Vanilla bean
  • 200 ml 13.5 tbsp Heavy whipping cream (whipped, for cream)
  • 200 g 7.1 oz Dark chocolate (70%, for glaze)
  • 100 ml 6.8 tbsp Heavy cream (for chocolate glaze)

Instructions

    Bring water + cannabis butter + butter + salt to a boil. Add flour all at once, stirring — a ball forms.

    Stir over medium heat until a white film forms on the pot bottom, 2 minutes.

    Let cool. Stir in eggs one at a time — dough becomes shiny and thick.

    Using a piping bag with round tip, pipe small balls (about 1.2 inches / 3cm) onto parchment paper.

    Bake at 400°F (200°C) for 25 minutes. Do NOT open oven in first 15 minutes!

    Vanilla cream: Bring milk with vanilla to a boil. Whisk egg yolks + sugar + cornstarch. Stir in hot milk, bring back to boil. Cool, fold in whipped cream.

    Cut profiteroles in half. Fill with cream.

    Chocolate glaze: Melt chocolate + cream. Dip profiteroles or drizzle over them.
